it works great. you can make a shit ton of pulled pork or shredded chicken in 30 minutes, rather than in a crock pot for 8 hours.

My only tip is don't try to do the trick of trying to shred the meat fast with an electric mixer. The meat is too soft and gets kind of a mushy texture if you try.

Shred it the old way with a couple forks. Unless you have those meme wolverine claw things.

I haven't made pulled pork in an instant pot but I'm guessing it works well because I've had great results stewing chuck roasts in them to make Italian Beef. It's a chuck roast, big jar of pepperoncini, and ranch dressing dry seasoning. The beef pulls apart very easily when it's done.

it works better in the slow cooker. ive never got it to come out perfectly in the instapot. somethings just not quite there with the texture and the flavor is never quite developed. ive given up on it and just use the crock pot. maybe its user error but i know it comes out perfectly in the crock pot without fail.

literally just made pork shoulder in my dutch oven.
gave it a good spice rub, browned the sides, sauteed some onions in the drippings.
popped it in the oven for 4 hours with some beef stock.
shredded the meat, it comes right off the bone.

had a ton of drippings left. I cooked carrots and celery in it along with the bone from the pork.
after the veggies were done I broke open the bone to expose the marrow to the stock.
then turned everything left into brown sauce.

I find myself doing almost everything in my dutch oven. enameled cast iron that I can use on the stove or in it, and its huge/deep gives it high potential.

I have an instant pot but I used it to air fry russet potatoes. The pork shoulder might not even have fit.

it works and it is easy, but the taste is far better in a dutch oven. you just can't achieve the browning that makes meat delicious in a slow cooker.

pressure cookers do not cook at a real high temperature. they cook at the same temperature. they just isolate the environment and keep moisture from escaping, which also allows water to boil faster.

One tool can have many uses, As I said pressure cooker, slow-cooker (crockpot), rice cooker, and a sturdy pot fit for the gas range.
