1. How do you find non-shitty buns. I mean not sugary or flaky, but soft and compact? I swear I they're nowhere to find. I don't know what to look for.
2. Can you use other types of meat besides minced to make a good burger?
3. I don't want to use processed cheese slices anymore. Is there something else that is just as cheap?

I've already told you to make your own buns. Your loss if you can't be bothered.

There's no rule that you have to buy a pack of shitty mince from the supermarket. Buy a mincer and you can mince whatever meat you like. Try adding veal or pork to beef, or a red meat like venison.

Use whatever cheese you like. High fat content cheeses will melt more easily. Blue cheeses like Stilton or Gorgonzola are common enough, or try Gouda or Emmental. Try stuff.

If you place sliced beef or chicken breast or turkey deli meat on a bun you have a sandwich, not a burger. It's not thee TYPE of meat, it's the PREPARATION. It must be a patty formed from ground meat.

It's fine to not grind your meat, but then it's not a burger but a sandwich. There's nothing wrong with eating a sandwich, it's just important to understand what terms mean and why they're used. Salmon burgers exist, they're made from ground salmon. If you prefer the salmon left whole you could have a salmon sandwich, which is great but still just not a burger. Not being a burger isn't some insult or negative value judgement, it's just a fact of categorization.

Go for round "steak sandwich" buns. They're usually much softer and hold together better. They're a bit too thick, but it's worth it. Just use pepper-jack, or gouda, or some shit like that. It melts pretty evenly. I prefer chedder, but it's and uneven melt and the oils separate out.

If you don't want to buy stuff from the grocery because goyslop, either go to a decent bakery or make them yourself. Tons of bun recipes online.

Yes, it's called grinding your own meat. Then you can grind up any meat cut and mix and match per your wildest desires. I'm defrosting some of my brisket+bacon grind mix for making burgers this weekend. I thought this was a meme until I tried it and holy fuck is regular hamburger meat basically tasteless compared to doing it yourself. Basically you grind a lean meat with whatever fat source to get a % lean:fat ratio you'd like to achieve. They make meat grinders for stand mixers, super easy to do this crap.

If you have a deli meat slicer, you can slice whatever blocks of cheese you want and can get your hands on. Usually this will be slightly cheaper, and doing it yourself saves the deli markup costs.
