Start the potatoes whole and unpeeled in cold water and gradually bring to a simmer and simmer until cooked, then remove, shock in iced water and peel skins. Roll in oil and bake at 425 until the outsides are dry and a little browned.
I find this greatly improves the taste and texture.

for salad or soup? for soup i use a stale baguette then bake them at low temp to dry them out further then coat in olive oil and then bake at a higher temp.
They won't get soggy in soup right away like normal croutons but they are way too crisp for salad

I have never made them before but i'd assume you want to start with a soft dense bread, cut into cubes and toss in a little oil with garlic powder, oregano, basil and salt&pepper then bake at a lower temp like 350f to dry them out and pull them out just as soon as they brown and get them on a cooling rack.
the difference being you really just want to dehydrate them unlike soup croutons which use a little more oil and you're going for a hard toast
