Living in small towns in Missouri, Kansas, and Illinois over my life, individual town you live in make or break the quality of life more then things that apply over the state, especially restaurants. Though Kansas is the least interesting if you're not involved in agriculture or whatever local business there is. Rural/Urban divide is a much stronger IMHO, and if there is anything you like about the latter your options between Kansas City and Colorado are limited.
