You could always try doing something like a cafe cubano, just sprinkle a bit of brown sugar on top of your coffee puck and pull the shot, then make a cortado from that.

Personally I've found I really don't care for sweetened coffee since I started learning how to actually make it well a few years back, but let us know if you try it and how it turns out.

Has anyone tried a sub through Atlas? I want to try some new shit but I'm too lazy to look up a bunch of different roasters and choose stuff from all of them, so the idea of something where I get a bag from a different region every couple weeks to try out is appealing to me, but I don't know if they're worth a fuck as roasters or if they source their shit well. With this post I’ll not only prove that the anon saying that my moka is overpriced is wrong, but at the same time I’ll show you that actually it’s the Bialetti moka the overpriced product.

Using the weight on my scale, we can calculate the price per gram by using the prices of both moka pots as reference.

The Bialetti (3 cup) on the Italian Amazon in this moment costs 24,90€ but the official price on the official Bialetti store is 30,90€. We’re using the lowest price now.

The Giannina (3/1 cup) on the Italian Amazon cost 79,90€ but there isn’t an official store with an official price, I paid mine from an authorised retailer 110€. We’re using the Amazon price.

The aluminium + plastic Bialetti moka weights 410 grams and has a price per gram of 0,06€.

The alla stainless steel Giannina weights 728 grams and has a price per gram of 0,10€.

It has to be noted that aluminium is cheaper than stainless steel (source check any raw materials stock market page), it also has to be noted that Bialetti make all their products industrially and in several parts of Europe whereas Giannini is a completely artisanal low number production and it can’t even flex the brand because everyone in the world knows that moka pot = Bialetti, also Bialetti has decreased the build quality of their products a lot in the last 10 years so their moka pots have rough edges and casting imperfection while the Giannina is as perfect as it can be for an artisanal product. These pros/cons cannot be calculated with this method.

The Giannina is interesting because of the flippable lower filter, making it versatile.
And you are because of the flippable lower filter, able to clean the funnel.
The stainless steel Bialettis as far as i can tell, you can't separate the lower filter from the funnel, which i have made possible in the aluminium moka pot from Bialetti.

I like to clean the funnel so old goo doesn't collect there.
first time i did this (after two month of use (one brew every day)) i was shocked how much stuff was layered in the funnel you normally can't reach to for cleaning.

Yes, technically seen the basket is nothing other than a funnel, holding a filter, which makes it being a basket.

My Bialetti moka pot has an aluminium funnel and the filter is held in place by three indents.
I used a round steel bar to flatten them a little on the inner side by rolling over these indents with a little pressure from my hand.
Just make sure you are not flattening the cropped fitting that holds the funnel in position in the moka pots boiler.
After this was done, i could pop out the filter with a thin and long steel pin by inserting it via the funnels small opening on the lower side.

There was a shit ton of stuff inside. Now i clean this funnel every 3rd brew or so.
Feels better doing so.

That’s not a good idea, because by having two moka pots with different filters he will need two different grind sizes if the needs to make two moka pots at the same time.

With that said, the Giannina’s is good and versatile, it’s easy to clean but keep in mind that when you flip the reducer between 1 to 3 cups you’re not getting the dose reduced by 2/3rd, you’re close to having 50% of the dose and also the yield is close to 60 grams (3 cups yields 120~130 grams). It’s not a big deal, adjust the water and so on, but it’s just worth to remember since it’s an extra feature.

When the Giannina is new, for a couple months or more, depending on the use, it will be hard to close the mechanism because it has to loosen with the use.

Lastly, here’s a picture of the top opening of the 1L Hario Buono with a scale. The internal opening measures circa 73mm so the 75mm sink strainers would fit but I’d buy something slightly larger so it sits securely. On Amazon I found 77mm strainers so that’s what I’ll probably buy.

Keep in mind that from the opening to the handle at the bottom there’s a bit less of 10mm so you wouldn’t want to exceed a radius of 80~82mm for a circular strainer.

Before ordering the piece I also need to measure the brewer of the Flair to see if it fits inside the strainer (most of them are shaped like baskets), which should be between 50 to 46mm.

At worst I’ll go to a blacksmith and ask him to make me a drilled stainless steel piece with my measures.

Preheats his flair by putting the brewer on top of his Hario Buono(tm) by laying it just over the lid with the cap inside the hole, without using stuff like strainers and such to maximise the steam exposure, and as you can see in the video the temperature strip reaches 80C but we don’t know how much time it’s rested in that position. He the does a second 30-40 seconds preheat by pouring boiling water in the brewer so it’s fully 90+ degrees Celsius.

Question: is it necessary to do the second preheat step? Can I rest the brewer on top of the kettle, without strainers, just on the lid, and wait for it to be heated? Is the strainer really necessary?

Update: I found 2 strainers from a shop here, one is 75mm and the other one 80mm.

The 75mm fits perfectly but it’s not safe to use because it has to stay perfectly flat otherwise it can roll inside (it’s doesn’t fall) and you don’t want to do this when there’s boiling water under, also you need silicone thongs to remove it safely when it’s hot. I don’t have them and it’s too dangerous.

Now, the 80mm one is perfect with measures but it has a major problem
which is the bumps under that makes it unstable and non flat on the Hario, you can avoid this by turning it upside down but you loose the protruding piece that makes it easy to grab it and lift it when it’s hot. Also there are holes in the external part and this concerns me because the hot steam can melt the handle (the instruction manual warns not to use the kettle without lid for this reason), and finally there’s written on the package that this strainer is not suited for direct contact with food, so I don’t know if it’s a good idea to boil water under that and also lay the flair brewer over it because it will go in contact with coffee and the water I will drink.

So many questions, so much uncertainty.

Just leaving it on top of the kettle, you're probably never going to reach full preheat to the temperature you want, because while it's sitting there soaking up heat from the kettle it's also going to be losing heat to the environment and unless you're going to leave your kettle sitting at a full boil with it sitting on top for a ridiculous amount of time, it's not likely to heat full that way. Just flushing it with some water right before you brew is pretty much always going to be the most efficient way to bring it up to final temp, pre-preheating on top of the kettle basically just eliminates the need to do multiple flushes with hot water, so you waste less.
