the magazine is 17cm wide, 24cm tall, and like 1.5cm deep
i would say maybe 1/3 or 1/2 of the pages are full page full color professional photography and the other is a mix of half page and full page articles
and there are some advertisements in the magazine of course but that are not in my opinion invasive or immersion ruining.

How to I find good beans?
I will be brewing in a moka pot and grinding myself. I like coffees that taste more fruity or chocolatey, the best I ever had tasted like cherries & cedar, a long time ago. But I don't know how to find that from an origin or roast.

My manual grinder has now turned 1 years old and I’ve never disassembled it to clean it inside.
I just brush the outside of the burrs and remove all the dust there and in the cup, turn it upside down and tap to let some dirt fall off the opening at the top.

I have the "milk based" ONA Aspen beans and my original post regarding them was simply that it tasted fine (not amazing and somewhat inconsistent) as an Americano. im a lazy fuck so im actually 2 issues behind but the 2 i did read at the first half of the year(its a quarterly mag) were good.
BUT i did feel like and perhaps it was just the 2 that i read, they felt a little woke in their framing of the relationship the buyers of coffee(mostly white people) have with the producers of coffee(mostly non white people)
it felt like they were unnecessarily poisoning the well on the topic.
like weighed language and stuff like that
but from memory it was only a few articles in the first one i read and a couple in the second one i read.

but they also had good insights into the life of the farmers and how some of them got into speciality coffee without even really knowing it.

What basket are you using? For both their stock and OEM precision double basket I've found that generally a roughly 18g dose works best. Also keep in mind that in addition to grinding finer, another common way to adjust for lighter roasts is to up your dose since they tend to be denser beans and take up less space in the basket once ground compared to a darker roast.

Not sure how used to the machine you are already, but are you purging the group before you lock in the portafilter? If you've had the machine on while you were prepping the puck and you don't purge there's a good chance you're hitting it with a blast of steam that could be fucking things up, generally if you run the pump to purge just long enough for the ready light to go off then lock in your portafilter and start as soon as the ready light comes back on you should get the correct starting temp.

If you try those steps and it's still pulling super fast like that then definitely just grind finer.

Absolutely. You need to be way finer and try just pulling a longer ratio as well. Lighter roasts are harder to extract as well, due to being much less fractured than darker beans. Give them a little extra help. See how it tastes at 1.1.5 and a 1:3.

My preferred local roaster is on vacation until next week, so I was only able to pick up some of his Ethiopian Sidamo light-medium roast. I ahve never worked with a roast lighter than medium before. Is it going to be a massive pain in my ass? D40 grinder / bambino +

I've used both and didn't notice too much difference, but it does seem like the bleached papers flow a bit more evenly in my experience. For me the deciding factor was really that I found a good deal on a fuckhueg pack of 1000 online so I just grabbed that to keep me set for a good long while.

Okay, first pull with the Ethiopian Sidamo:
Distinct smell of blueberries with the ground coffee, very nice. I clearly ground too fine though, it took 40s to get 35g out of 18g in. I will go coarser next time.

The main negative so far is that the body is just a lot thinner than I have found with the more traditional darker roasts I usually go with.

Is there any reason to pick up a V60 if I already have half a dozen coffee making methods? I have a Chemex for pourover and the only real difference I can see is the V60 using thinner filters, something that can be pretty easily changed in the Chemex with something like a reusable filter or just finding thinner filters.
Also at the same time I managed to pick up like two thousand Aeropress filters for under 20 bucks and I've finally gotten a method down for a cup I enjoy out of it so my single cup needs are filled unless the taste is drastically different.

There are other small differences between chemex and V60 besides the papers, the V60 is ridged on the inside to keep the filter from completely sealing against the cone and stalling out whereas the chemex is completely smooth, so that can definitely have some effect on the brew even if you were using identical papers, but honestly if you like your chemex and you don't need/want another brewer, then no there's not really a reason to have both unless you just want something new to try out. Of the two I much prefer the V60 because it's easier to store/clean due to the cone being separate from whatever you're brewing into, but that's just a personal preference thing.

With FP the grounds sit at the bottomand you pour the coffee off the top, limiting the amount of sediment that ends up in your cup depending on things like how fine your mesh is, your pressing technique, and how careful you are when pouring. If you hold the grounds in an infuser in/above the water, all that changes so you may end up with a very different kind of body to the resulting cup. Not saying it would be bad, but I'd definitely expect it to be different.

Yeah, I was thinking about picking one up just for shits and giggles. I've never had issues with my Chemex stalling, if anything I struggle to get the filter to sit against the glass without air bubbles in the first place.
I usually use it for batch brewing anyways, when I'm spending 10 bucks for 100 filters I'm not going to waste one making 10 ounces of coffee, especially with that giant reservoir tempting me to overextract.
I might pick up a V60 anyways just for variety but no one around me sells filters for them which leaves me ordering them online, so it's probably going to sit on the backburner until I forget about it.

Temp was at "med" on my electric burner, though admittedly I don't know how hot that burner gets. With this past one, I did 16.5g (somewhere between 16 and 17, scale only does 1g precision), which is about full on the basket. I didn't tamp, but I tapped the basket itself to settle down to level. Staling is oxidation, so limiting the amount of oxygen your beans come in contact with definitely makes a difference. Anything with an airtight seal should work fine, including a jar as long as the lid fits well. I just have one of those flip top storage containers with a silicone gasket and a latch to hold it closed that you can find at any store, it works fine and is quick and easy to open/close with an opening wide enough to easily get into and scoop out some beans to weigh. If you're very autistic you can get one of the those overpriced canisters designed to pull a partial vacuum as you close it to limit contact even further, but unless you're storing your beans for way way too long after opening I think those are probably overkill.

I've only ever used a bialetti in around the same size. Try adding a smidge less coffee and not tapping. It's ok if it's a little uneven, you are not trying to create a puck. Just for shits and giggles, try that 1:3 at ~20 seconds and at ~30 seconds and see what tastes better to you and adjust from there. 1 of the two hario goosenecks arrived today. Its also made in japan. The lid doesnt fall out when held perpendicular to the ground but it does slip out partially, fortunately held back because the lid insert is long enough.

I would prefer it if the lid was snug, but this first one was a half off open box model. I can't see any imperfections in the finish and I doubt I'd care anyways. So all in all, I'll likely end up keeping this one unless the one arriving tomorrow doesnt have this issue. But I'm confident it will.

I'm curious to see if it is also a made in japan model, or otherwise.

I have the same machine and I only have a hario scale (which I use for the kitchen in general) and my own milk jug. The only thing I'd really buy these days is an automatic tamper because depending on how half asleep you are, you might under or over tamp which it's pretty sensitive to. Both. If you can order the gaggia OEM bottomless portafilter, the basket or comes with is much better, I went from completely inconsistent results (would dial in grind and dose for a double pulling in my desired time, then go to repeat the exact same thing with the same dose, same grind, same prep, and the shot would completely choke out) to getting flawlessly repeatable results every time. With the stock basket I was also getting very inconsistent taste from shots even when I was pulling in my desired time with no obvious flow issues, I suspect because the extremely uneven holes were encouraging channeling that I couldn't see with the spouted portafilter, shots were always coming out at least slightly sour even when the rest of the flavor seemed right.

Once I swapped to the basket that came with the new portafilter, I just had to do some slight grind adjustment to get my desired timing because the holes were actually consistent and fully punched and since then it's been a breeze to pull exactly what I'm trying for and flavor has been much more balanced.
