One of these in the 14" size, whatever that is in metric. It's big, it's bad, it's as big as my stove can handle. It lives on the range and gets used every day. It can't do everything, but if had to start again from nothing it would be the first pan I would get. Unfortunately it was a real bitch to find and get one here in the USA twelve years ago and even more difficult now that the Mineral B shit is in the way.

It's interesting to me how Williams-Sonoma changed the name. I notice they have a lot of pans that are exclusive to them which have names like "everything pan," "essentials pan," "weekender pan," "Sunday night pan," "chef's oven," which all have about the same shape--

Here's a Le Creuset product I only ever see at W-S. Same general shape, like a wok with a lid or oversized saucier. What is even the advantage of such a cooking utensil? I can't think of a single reason to prefer the smaller bottom in a Dutch oven. The whole design seems to be based on creating a pot/pan that does everything poorly, so their saleswomen can still tell customers "yeah, but it *does* do everything, though."

My smaller cast iron. I think I got it at a thrift store, I don't have any memory of when it came into my possession. I remember buying my larger pan on Amazon, Utopia Kitchen brand. But this thinking I have no clue. Seasoning it had was garbage, so I took a sander to it, olive oil treated it in the oven a few times, then cooked a few packs of bacon. Now it works like a dream. Love cast iron.

I recently got an enameled Dutch oven for my sourdough bread endeavors, and I'm paranoid about fucking the enamel up by cooking with it. How do you people do it? Because cast iron can easily be retreated, hell I eat a pretty fat heavy diet so it's auto fixing. Enameled is fucked once it's fucked.
