hey I also basically had this last night, although I didn't spice it. for one gallon of apple juice I made caramel with one cup of sugar, poured some of the apple juice into there caramel instead of cream to make a caramel sauce, reduced some of the apple juice down so it'd fit in my fermenter and then fermented away. it went completely dry and it didn't really taste of caramel at all, but last night I heated it up and added a bit of brown sugar and cinnamon. still didn't quite taste like caramel apples like I was hoping, but it was a really pleasant drink. was around 10%

Whiskey is a strong drink on its own and you need to ease your palette into it otherwise the alcohol content will overwhelm you. I would suggest you start with a lower 80-proof whiskey and maybe even add a few drops of water to dilute the alcohol to better enjoy the flavor. Most of the stuff falls within the 40-50 dollar range. So not top shelf but not bottom shelf.
Of those the Eagle Rare was exceptional. Genuinely smoothe and pleasant. Four Roses Small Batch was pretty nice too as was the reg B-Trace.
Everything else? Absolute trash. Even the Angels Envy which Ive heard wonderful things about. Smells and tastes like you just popped open a bottle of rubbing alcohol and licked a 2x4 after. No sweet notes, no "vanilla or maple syrup " just acrid misery. The worst were the Wild Turkey and Suntori. Those were more akin to licking isopropyl dipped cotton balls than anything enjoyable.
I've even tried to dilute it with a bit of ice and or water as the other anon said, and it doesnt help in the slightest.
I have a wonderful and expansive pallette when it comes to all cultures of foods, but specifically whiskey, flr the most part, just tastes terrible and it makes me feel like Im missing out on something wonderful. Like a color everyone can see but Im blind to.
And any attempt to "research" the problem is "just drink more lol" and it comes off as alcoholic cope.

The 400$ a shot whiskey tasted nearly the same as the 30$ a shot whiskey. The 4$ a shot whiskey was actually a bit worse. The expensive whiskeys just taste mellow and like wood.
