2:1 milk:cream ratio, get it simmering in a pot or saucepan. Grate nutmeg into the mixture.
cream together egg yolks and sugar, reserve egg whites (I like to make meringue cookies with them, perfect pairing imo)
once the liquids are simmering start introducing a little bit at a time into your eggs, whisking vigorously.
once all of the liquid is incorporated in the bowl add back to the saucepan/pot. continue to whisk vigorously. use a thermometer, the mixture should get to about 160 freedom degrees then remove from heat and add vanilla extract. If you want to have alcohol in from the getgo you can add bourbon, spiced rum or brandy at this point. I wouldn't do more than a shot per cup of milk, you can add more later if you want something stronger.
Pour through a mesh strainer into a bowl, transfer from the bowl to your storage vessel and put it in the fridge.

You'll probably have some custard-like solids left in the pan/strainer depending on how successful you were at tempering the eggs. this is not a bad thing, it's delicious too. I'm lazy and impatient so I usually have more and eat them warm but you can also collect and chill these.

i have literally never measured the vanilla or nutmeg, not too much though, probably less than a teaspoon of each. how much liquid nog this makes depends on how well you control temperatures/tempering the eggs. but i find its enough for a couple of small glasses.

also top with cinnamon and you can throw a cinnamon stick in with the simmering milk if you want more of that.

I start mine at the end of October so I'm ready to kick off nog season on Thanksgiving.

750 of whiskey
375 each of rum and brandy
two dozen eggs
three cups sugar

Crack the eggs into a gallon jar and burst the yolks. Slowly pour in the booze while gently stirring. Add in the sugar and gently stir until it's more or less dissolved. Store in the fridge and gently stir again on day 7 and 14. On day 21 strain through cheesecloth to remove clumpy bits, and bottle. Yields three 750s of strong nog to keep in fridge for thanksgiving, Christmas and new years. At serving time mix about 1:1 with milk and top with a spice like nutmeg or cinnamon.
