The q2 used to come in two different versions, 38mm "pentagonal" burrs and 38mm "heptagonal". The pentagonal burrs were very similar to your c2 burrs. The heptagonal are "clones" of the comandante. Q2 was seen as the "budget king" for a while because it was basically a $100 chinese comandante and a great entry point for a filter grinder. The q2s only has the hept burrs.

Certain burrs get copied for a reason. You'll find that "c2"/"q2" burr design in a ton of cheap grinders. They're basically simpler clones of the "m1" burr in the old baratza maestro(encore predecessor). Baratza stopped using that design a long time ago in favor of the "m2" burr. 1zpresso's zp6 took that design and tweaked it for lower fines.

No, they're very different grinders. Pentagonal version sucks, was discontinued. Basically what you have in the c2. Heptagonal stuck around, got a second revision(7cv2 in the pic), is also scaled up to 48mm in the 1zpresso K series.

Kingrinder and 1zpresso are v e r y close as companies. Kin was started by 1zpresso employees and probably still comes out of the same factory, just either second quality on the burrs or they don't go through a extra polishing or something that would drive up the cost. Little cheaper all around.

Well I have like 2 medium sized "lattes" from nespresso Pro machine at the office. It costs like fucking 3k lmao. Well those coffees actually suck dick and I enjoy the ones I make at home way more.
Well finally what I was wanting to tell you the rest is for context.
They released "frosted caramel nut", I had it on vertuo capsules. And it's the only coffee I've really enjoyed so far. Maybe it's cause I had it in 1/3 the size with equal amount of sugar, idk. But I enjoyed the fuck out of that coffe.

Yep. Your blade grinder is randomly chopping beans up so you're left with an assortment of chunks and dust. You can't run it any longer otherwise you'll just be turning the chunks into more dust. Food cooks more evenly if your ingredients are of a similar size. A burr grinder feeds in beans and mills them down smaller and smaller until they drop out the bottom. You're still going to get some fines where the beans are breaking, it's just going to be so much more of an even grind, and with all the adjustment you need to dial in. No more shaking the hamilton beach and hoping for the best.

First brew, 1 cuppa reducer on my moka and JX Pro @ 1.5.2 because medium roast.

Yes, I can smell the robusta because there’s a woody smell from the moment I opened the bag and even more so when I started grinding it. A lot of static too.

The main smell notes are terrain and wood, but they’re pleasant and I can sense something akin to pepper and incense.

Since I’m at the beginning of the dialling in process, this first try may not be accurate also because I didn’t adjust the grind for the quicker 1 cup brewing on my moka, so I will modify the grind size as I brew other cuppas.

There’s the classic dark and sticky robusta foam, plenty of it, and from the moka pot as it brews the goff you can smell wood and very dark chocolate/cocoa.

It’s my first 100% robusta so I don’t know what to expect but I was sure to be strong and bitter, however I was wrong because it’s absolutely not bitter at all, in fact it’s sweet (!) yet there’s a bit of astringent mouth feel that balances it out, then the overall taste is a bold and round woody, nutty profile with the same hints I smelled of pepper and incense that reminded me of Indian goffee.

The notes on the bag says that there’s honey and almond notes too, I will adjust the grind to find them, even though I’m not sure if by increasing the extraction time (3 cups reducer) will give me a full extraction, so after dinner I’ll keep the same grind size but make 3 cups.

Amazon has the new version of the Gaggia Classic Pro Evo marked down to $400 new, and I'm tempted to pull the trigger on one. I have a breville duo temp pro and a k4 hand grinder. My setup cost me ~$400 total since I got both on sale and added a couple of "nice-to-have" extras like a puck screen, a dose funnel, and a WDT. Not high end equipment by any means, and not a very high barrier to entry for espresso.

Yes. Different geometries will also affect things like flow rate. Filters also play a role. Some are faster, some are slower, some intentionally clog. This kadou m1 will brew differently than a v60 with the same filters. Wider cone, bigger bottom opening, very different "ribs". All lead to a different flow. The bone china m1 will also be different from the normal one. You're doing chemistry in your kitchen, a coffee shop wagie is trying to get through their shift without getting bitched at too much. The clear answer is this. An expert barista with the best gear will probably make "better" coffee than you can even with the same gear and lots of practice simply because he does it all day everyday. But only if they take their job seriously because most baristas don't give a fuck. But not all coffee shops have better gear than you will have.
The other thing to remember is that its all your personal preference. With your own equipment and a little practice you can adjust things to taste how YOU want it to taste and be able to experiment more to expand your pallette and even know what you're tasting instead of rolling the dice at the coffee shop. You're in a good range there - the recent DF64 V2 fixes a lot of the teething issues with the first one, the DF64V is also worth looking at, it's smaller in footprint and has variable RPM which might make it more flexible for bouncing between filter and espresso. The coffees you drink will determine what burrs you want to run. You're not going to be able to pull "traditional" espresso with the mazzer filter burrs in the niche. You're going to be able to make muddy filter with the espresso burrs though. If you're after a single grinder to do both, you probably don't want to pay niche for a set of burrs you're not going to use. A df83 with SSP High Uniformity or Multipurpose will run you about a grand. Any problems with it and you'll have to go through a distributor. Niche sells direct to consumer, but they're out of the UK so thats a potential issue. Do some homework and come back later.

I ignored all the recipes that said "knead until the dough is smooth" and I kept kneading until the dough made a transparent veil by stretching without breaking, then I reduced the amount of butter in the main dough from 80 to 50 grams and the lamination butter from 250 to 200 grams so that I used a whole stick of butter for the whole batch. Also, I glazed the finished croissants with glucose syrup made by nearly boiling water and sugar in a 50:50 ratio, but that fucked up the exterior which is now wrinky so FUCK the sugar and I'll stick with whole milk + yolk or only whole milk.

The croissant was more airy and light, less buttery, less luscious compared to the previous ones but having less butter probably helped with the final result.

Here is my bed.
15g beans ground in a K6 set to 105 clicks (1 full rotation and 45 steps from zero). Brewed in a single cup tea steeper lined with generic round filter paper. Used a standard kettle and slotted spoon. 100C° water was hitting the slotted spoon, probably dropping in temperature before hitting the coffee. 225g water for a 1:15 ratio. Brewed in 4 minutes including a short bloom. Tasted okay for the beans I was using. A bit weak, longer bloom would have helped.

With this post my personal hater will have materials to shit on me for the next months, however I think that I understood what’s “wrong” with the Giannina.

The basket has a removable piece that acts as a reducer and sits inside the funnel, it’s pic related, and as you can see when you place it in the funnel it doesn’t create a perfectly sealed surface because it has a ridge when the flat part stays up and when it’s upside down the ridge is inside so the puck is not a regular piece but has the same ridge impressed on it.

While working as intended, this removable piece cause unwanted channeling and to avoid it you have to perfectly distribute all the coffe and tap all around to get the bed flat and even, I suspect that tamping would help too, however this is what leads to incoherent extractions.

Sometimes it just bubbles super early when the puck degrades and starts channeling, other times when I make the perfect puck the exctraction is super slow, other times it’s something in between like the webm above, because it’s fast but it doesn’t bubbles, but the coffee is foamy.

On the good side, it doesn’t matter if there’s channeling and the extraction looks like shit because the coffee always taste good so in the end it’s only a problem if you want to film the extraction because you don’t know what to expect.

I was butthurt because all the other moka pots acted different but then I started appreciating this behaviour because this gives character to my moka pot, like it or not, so…it is like it is.

Go watch Hoffmeme's video where he breaks down his ultimate moka technique, there's a lot of good info about controlling temp and flow rate there. The basic gist is you want to start with boiling water in the chamber from your kettle, heat it just until you start to see flow, then drop your heat pretty much all the way down until you get a slow steady flow like that. Depending on your stove's output, you might not need to drop the burner all the way to the lowest setting or you might need to slightly move the pot off the burner if you can't get it low enough. You want to temp surf and find the sweet spot for your setup.

Why overboil in the first place? If you want to brew at less than boiling temp then only heat the water to the temp you want. If your beans aren't burnt shit you can and should just brew at boiling anyway.
