My neighbor gets food just past its expiration date from Trader Joe's. His basement is full of boxes upon boxes of almost rotten produce. He seems to be doing okay, except that his house is full of flies and his wife has dementia so they don't leave the house much.
On second thought, don't eat the potato.

presumably you could freeze? i'm not sure if you could freeze them as is, but there are tons of frozen parcooked or lightly once fried that you then fry/bake once more at home. you could make just piles of frozen french fries, or maybe shredded hash browns. surely that would be better than eating rotten produce
