If nothing else, we know for sure that McDonald's changed the grease in their fryers to be vegetable based instead of using beef tallow. Pretty much anyone who isn't some kind of animal rights activist agrees that french fries tasted better back when beef tallow was used.
Food 'science' and logistics both have changed over the decades to allow fast food to be produced relatively cheaper, though with inflation and other factors, you can argue with if the final price is lower or not. When I worked at Burger King in 1989, the biscuits were made from scratch each morning and real eggs used for that and everything else. By the time I left about six months later, the biscuits came frozen and the eggs came from a slurry in a box. The croissants were the best choice after that change because we got them delivered fresh each morning from a local bakery but other franchisees may have used frozen.

Before Chicken McNuggets went all white meat you'd get a mix of white and dark, which wasn't terrible by itself, but the dark meat nuggets would occasionally have random chunks in them with awful taste and texture. They knew it they were bad because they briefly offered all white meat nuggets as an upsell before they just made them all that way as the standard nugget. That's the only real difference I can think of from back then.

but the worst to me is taco bell, they don't even offer the steak or chicken soft tacos and back in the late 80s they both were very different than the variations they make now and right before they finally axed them. (at least they still offer steak and chicken)
the steak and chicken had a sauce that it was in and the tacos were so tasty and sometimes dripping of that sauce! and they only offered HOT and MILD sauce packets

Then after that, they started using vegetable oil, but they still put a beef tallow flavoring powder on the fries, and they still tasted great. Then after even more outrage from vegetarians, they removed even the beef flavoring powder in the 2000s, and since then they've sucked.

From what I remember, the burgers themselves used to taste better back then as well, but that might just be nostalgia. I do think Taco Bell in general tasted better back then, especially the chicken.

Taco Bell kept removing menu items until I gave up on it. They’re much more expensive, too. Also the quality has declined. They just mix and match a few bags of pre-prepared slop to create an illusion of variety while filling out the menu with cheap potatoes. You used to be able to eat cheap or pay a few bucks extra for something better that had chicken in it. Now it’s all overpriced slop with a few lower-priced items like bean burritos. I learned not too long ago all of their prep involves opening up bags or buckets and dumping them into bins. They cook their rice and fry their chips and potatoes, but that’s it. Lettuce and tomatoes arrive pre-chopped. Taco meat pre-cooked. Beans are reconstituted from powder to probably save on shipping. It is all almost entirely heat and serve, squirt out of bottles, grab and dump. .

It was better. Even the presentation was better. I remember in 1997 when the Star Wars special editions came to theaters, Taco Bell did a promotion and the kids meals had full color holofoil cardstock boxes that was interactive because there were perforations you could punch out of ships and make an action scene with the box. Yes, they used to use lard and tallow for their frying oils. They also, in general, had better quality ingredients but over time had to cut costs because of jewflation, in order to keep prices low they had to destroy quality in incremental steps that weren't apparent over night but add up over decades of fuckery.

Looking at kids meal toys (if those even exist anymore) is a good indicator of this. They were still cheap before, but now it's literally like a pack of stickers or a fucking paperback book the side of your palm. They weren't the greatest back then but they were definitely better quality and had more thought out into them.

Lard is seriously under-rated as a cooking fat, especially for cooking pork. I think people just get put off by how it smells when you're heating it up. Beef dripping is another, it's god tier for potatoes/fries. The absolute best was using the fatty run-off from a roast beef.

One of the things the 80s and 90s were good for was making low quality ingredients as tasty as possible and people just didn't really care about how healthy something was. You had the Archburger in McDonalds where you'd bite into it and the fat would pour out. Shit tasted great.

If you've read Discworld, CMOT Dibbler's Sausage-inna-bun was based off of the low quality street sellers from the 80s and 90s where they'd tempt you into low quality burgers and sausages by piling on fried onions which tasted and smelt great (cooked on the griddle with all fat and meaty fragments from the all the burgers cooked on it that evening) . These have all died out because if you pretend something is "gourmet" you can bump up the price by 50%.
