There are many more nuanced and sophisticated cheeses, but for me the go-to if i just want a treat is the Red Dragon, strongly flavored with whole mustard seeds and ale. Just good to eat.

I've always got smoked gouda manchego and pepper jack in the fridge so those would probably be my top 3. I've half a container of ricotta from pizza that I mixed with some salt pepper honey and oregano and I've been eating it on toast for the past few days, it's good.
