most of the action of kneading dough is just heating and mixing it so that it blends the ingredients and moisture evaporates to the point where there's no free water
why do people call it "developing gluten" when that happens faster while it rests. is it a conspiracy?

you can prove this by simply weighing the dough after initially mixing it and after it's ready.
