Yeah I swore I’d never do that shit, and then I went to a restaurant that straight up didn’t have an option…the waitress offered to scan the menu for me and let me pick from her phone…and I was hungry so I just said fuck it and I was pleasantly surprised that I could see the food beforehand and customize it.

Things like sauces, lasagna, stew etc that either take forever to cook or easily reheat are prepped beforehand, but you never want a shrimp scampi to be sitting around for a number of reasons. Some other things like food that's double fried is fine to be prepared ahead of time since letting it cool and recooking it is part of the appeal.

It really depends on what you order but most meals in a professional kitchen should cook in 10 minutes anyway
