Things like sauces, lasagna, stew etc that either take forever to cook or easily reheat are prepped beforehand, but you never want a shrimp scampi to be sitting around for a number of reasons. Some other things like food that's double fried is fine to be prepared ahead of time since letting it cool and recooking it is part of the appeal.

It really depends on what you order but most meals in a professional kitchen should cook in 10 minutes anyway

I'm ok with stuff being churned out like breakfast orders, bbq and gyros... or most mexicain food... but the more someone is charging me for good food and drinks the longer it generally should take to make. One of the best places in town (not a big town) can take up to 30 minutes for a meal because they make everything from scratch and it's fucking amazing.
