Drain parboiled cut potato
Fry drained parboiled cut potato at low temp
Freeze fried parboiled cut potato
Fry frozen fried parboiled cut potato at high temp

What I do is make air popped popcorn and then spray a little cooking spray on it and sprinkle chili powder and aspartame on it.
This is a crunchy starchy snack loaded with fiber which is healthy for you. Fries are unhealthy.
This popcorn takes minutes to make and tastes so good that I doubt I will bother with any other snack.

A cutter speeds up the process but isn't required.
Fry them in 3 steps of 2min cooking waiting for the oil to reheat between cooking.

Buy yukon golds. Cut them up. Put them in a pot, then fill pot up with oil, enough that they're floating and then some. Turn burner on, don't touch the fries. When they're noticeably golden, start moving them around and keep stirring until they look done. Remove from oil and salt. Least fussy and most tasty fries imo.

If they're starting to fall apart you're going to have a bad time. I just over boiled some home fries that I finished in the oven and even that wasn't optimal. Frying them would have created more force on the fries/worse for their integrity. Also I dunno I will always prefer wedges to sticks. Theory still applies though if anything a stick will be more fragile then a wedge.

it's doable, but it's better not to cut them too thin and you have to drain them very carefully to not break all the pieces. After cooling down they'll harden significantly.

I've made batches all at once just leaving them in water filled bags after cutting/rinsing then using them days later.
Never done boiling or freezing, just fry once then leave them sit until meal is about ready and fry another minute.
Dump into paper towel in strainer and toss with salt.
