What's your favorite way of using big mushrooms? I tried using one as a burger patty, but I think I cooked it the wrong way. This time, it is steamed in soy sauce, then finished with peanut oil and rice vinegar. I deglazed the pan and poured it into the mushroom after plating it

Looks good. Try using sesame oil next time, which has a nice nutty flavour.

For big mushroom patties, just season them with salt, pepper olive oil and whatever other seasoning you want on both sides (make sure it's something that won't burn though). Heat a pan on high heat and wait until it's hot. Then place the mushroom stem side up and cook for about 7 minutes on both sides.

If a lot of water comes out, just let it cook off and continue cooking until you get a nice sear. It's pretty difficult to overcook a mushroom to the point where it becomes inedible.

The sesame oil I have has a pretty weak taste to me, so I switched to using it as my main cooking oil to finish with peanut oil. I heard that people usually use toasted sesame oil, but I don't want to be loading my body with more acrylamide than needed.

depends on the mushroom, but if you want to cook them whole my favorite ways are
>stuffed with cheese mixture(with onions/chives and garlic, maybe bacon if you're fancy) and roasted or grilled over charcoal
or for flatter mushrooms like parasol mushrooms

the most important part is the type of mushroom. oyster mushrooms taste a thousand times better than champignons and they're not that much more expensive.
heat up your pan (no sissy non stick pans) and then throw in the mushrooms, no oil. you need to get the moisture out first so the pan needs to be really hot and stay hot, this is why non stick is shit. once you've browned one side and the other side of the mushrooms is about 2/3 done you lower the heat so you can add butter and salt otherwise the butter would burn. don't use shit butter. kerrygold or better. don't overdo it, you want to taste the mushrooms, not just butter

The sauce is made with soy sauce or other seasonings, but you can use other seasonings as well.
It is pan-fried, but it is more succulent if you cover it with starch, fry it, and then pour the sauce over it.

I've had shittake all different than ways, and the best way to do it is cook it like meat. you wouldnt boil or steam a steak, just grill or fry it with sauce and seasoning

Honestly when I got some big-ass portabellos the first time they were old and kind of had a fishy odor. Same with the second batch. Third was fine but in areas of the country where there's not a lot of quick turnover on ingredients, had I had my knowledge, I would've just said fuck it and not even attempted in the first place.

(to your point though, you can't really burn a mushroom unless you incinerate it so go buck mild)
