make fried rice. if you have rice, eggs, onion, and some freezer peas/corn and asian condiments you can do it up. you don't have to have leftover rice; you can cook a batch and chuck it in the freezer on a sheet pan. throw whatever you got in there--proteins, vegetables, salty flavors, whatever. easy, fun, delicious. i eat way too much 3am drunk fried rice lately.

you took my advice on the fried rice! how did it turn out? it doesn't generally turn out great if using fresh hot rice. here's i usually do it these days: hot pan, oil, aromatics, rice, stir fry until getting nice and toasty, make well in center, put in whisked egg(s) and scramble up, mix throughout, toss in big pile of thawed peas and corn, season with soy sauce/salt/fish sauce/oyster sauce/whatever, keep frying til veggies are hot and maybe a little blistered, check seasoning, cram.
