I have a 1.15 pound beef liver. How/What should I make It?

Clean it and process it into pate
Put just a hint of pink salt and use a panade

Cut into thin strips
Sear with onions, salt, pepper
Add 1/2 inch of water
Cover, simmer for 20 min
Let it cool
Blend it to desired texture (slightly chunky or totally homogenous)
It will set and get more solid in the fridge. I've also added mushrooms before.

That liver is probably bad and is going to have a foul smell that’s impossible to get rid of even after soaking and cooking.
