I own and use one.
you're grilling or barbecuing with charcoal, what are you expecting the food to taste like?
I use mine to smoke, I flavor it with wood chunks like hickory, apple, or oak

My dad will buy prime beef and cook it on his green egg. I tell him that with such an excelelnt quality product he should be using gas or roasting in the oven to preserve it's natural flavor. But dad was influenced by mid 20th century television that's led him to believe that real men cook with charcoal and burning the beat to a carbon crisp is part of the experience.
