Are there any meals like ziti/lasagna, except not baked and you make it on a stovetop? I’m really struggling with this. I’m sure there has to be a dish like this out there but I can’t find a name.

But what I'm really concerned about, and I probably should've said this but I wasn't thinking clearly, is the cheese. I don't want the crust but I want the sticky gooey cheese. I guess I want to aim for something between Spaghetti and Ziti. I have mozzarella but I don't think that'll cut it. Should I get Ricotta too? I figure I won't need egg. The idea is to put all in one pot and make a cheesy creamy pasta.

Flavor. Ricotta gets you creaminess (but doesn't have a lot of cheesy flavor), Mozzarella gets you stringiness (but doesn't have a lot of cheesy flavor), Parmesan and Asiago get you flavor. Parmesan has a strong cheesy flavor but is too sharp and will quickly overpower the other flavors; Asiago and Fontina provide cheesy flavor that is more full and round without too much sharpness, but if you only use those without the Parmesan then the cheesy flavor will be very flat and one-dimensional. You want roughly equal parts Parmesan and your choice of Asiago or Fontina (or Pecorino, which is the other classic pairing with Parmesan).

You want to mix equal parts of bleach and vinegar. Heat it up and dissolve some cheese in it. 50ml each will allow you to dissolve around 400g of cheese resulting in a super stable cheesy sauce that you can mix with your pasta.
