They can be good, but waffles are easy to ruin by making them too thick or large. Similarly fried chicken can be made poorly with too much low quality breading. They can be good. Just often are not.

Chicken and waffles is sloppa, the sweetness of waffles doesn’t pair with fried chicken at all unless you’re a type-2 southern negro with no standards. Nashville hot chicken is the same concept but perfected, a simple slice of bread is all you need to soak up the oil and spices

I don't get how this works. The very function confuses me. You eat waffles with a fork and maybe a knife. You eat chicken with your hands. How does using waffles as chicken plates improve either?

I worked at a restaurant that had chicken and waffles(Very out of place for the menu since it was mostly irish pub food) and we got so many confused complaints about it since we didnt really hold true to EITHER southern black or irish culinary elements.
It was a maple syrup waffle(Think a mcgriddle bun, except fancy) with deep fried panko breaded chicken thigh meat, and then for some reason we added slices of granny smith apples and a chili lime seasoning.
It got to the point where the owner would write a note on the menu explaining the flavor combo worked if eaten together. Still didnt stop the negative reviews on google and yelp, to the point where the dish was pulled.
I never ate it, but i did try the waffles on their own and they were delicious. Cutting them out of prep prob saved a lot of time.

you may be a good person, but I think it's an issue that you did not try every item on the menu that you cook at the specific establishment you work at. I find that sort of disturbing but thank you for not being a homeless bum at least.
