My daily driver
I just buy boxes of Japanese curry off of amazon, make some basmati in my instant pot, slice up some veggies and chicken thighs, dump that shit in my instant pot after the rice is done, and then within the hour I've got delicious dinner for an entire week
I literally never get tired of it

is good. Use

>carrots
>potatoes
brown the beef, then stew it in some beef or chicken stock until tender, add vegetables as appropriate so they end up soft but not mushy. Add curry cubes as directed on packaging, it's been a long time since I used them but I don't think it was too complicated. Serve with Japanese short-grain rice(often sold simply as "sushi rice").
Once you tried it with the curry cubes you can make your own curry roux for superior flavor that's more suited to your personal tastes.
