Reminder most episodes got released on peacock last year or the year before so all of the translated episodes are available in 1080p streaming quality, much higher image quality than any of the older VHS rips or early TV tuner card recorded copies.

Though there are still like a few dozen episodes that never aired outside of Japan and never got translated and remain Japanese only unless you can find a fan sub version floating around somewhere.

Yeah and they're quite bloated because peacock didn't really optimize their encoding for such low-resolution content. So even though it's "1080p", it's still a show from the '90s and it looks it.

If someone wanted to put in the effort they could easily knock these seasons down to ~10Gb each or less and retain the image quality.

This happens all the time in competitive cooking shows. Most non-baking shows like this are going to have at least one shot of that because when it happens it's good TV, packaged with post-commentary of the goober talking about how they didn't like cutting their finger.
I'll say that we will never have the perfect mix of competition and dignity of Iron Chef Japan anymore. I don't remember that episode but I'm sure it wasn't played up for le drama like in modern shows. If that's the sort of thing that you're referring to then I 100% agree.
Shows with that level of competition have don't show as much dignity and respect to the food and people, and shows with that much dignity are comfy but never hit that level of competitive intensity. Closest show that comes to this is the professional pastry spin-off to great british bake-off, and even that tries to have wacky randumb hosts.

Did you guys know they have 45-60 minutes to strategize/plan their dishes after the secret ingredient is revealed but before they start cooking?

More than that, of the ~300 episodes (including specials and shit) only 180 are available on the peacock streams that have english dub. There are another ~80 that you can find out there with subtitles but no dubbing. Some are overlaps with dubbed episodes though. But at BEST mixing the two sources I think there are ~210-220 english episodes (either subs or dubs) and another ~80 or so that never got translated (at least not that I can find).
