That looks pretty aite.

A trick I found/learned from making bolognese is to reduce your sauce down to the point the oil splits then adding a good amount of salted pasta water to reintegrate everything. After adding the water and mixing for a minute you drizzle evoo in and it gives the pasta a really nice glossy look.

You wouldn't want to split a cheese sauce, but it works great for tomato and meat sauces.

Add minced garlic, chili pepper, and tomato paste and saute for a couple mins
Add strained tomato sauce
Gently reduce until the oil splits and the meat is tender, maybe 1 hour. Longer is better. Add water if needed.

Salted water-pasta

Take some sauce, add it to strained pasta add a good amount of pasta warer and stir.
The sauce will eventually coat the pasta. Add more water if it doesnt.

Drizzle a generous portion of evoo on pasta and stir until pasta is glossy.

Serve.

My favorite way to make an easy meat+tomato sauce for pasta.

Some restaurants tossed it for ya, and only one of the restaurants I visited put it on top of otherwise dry pasta.

I think that, if the sauce is saucy and juicy enough you can get away with doing either. If the pasta is more dry, its always better to add pasta water to emulsify while tossing.
