Well, I made them.

Bought
>queso fresco
>cilantro
>jalapeno
>lime
>herdez salsa verde
>herdez salsa casera
>chi-chi's white corn tortillas

Made pico. Tried different combos.
Favorite was salsa casera + pico + dash of taco bell diablo sauce.

Forgot to get the juarritos so I drank a 7-up zero sugar.

Was bretty gud. Think I still prefer wheat flour tortillas tho.

Wheat / corn tortillas are largely a regional divide thing. I am from a "Transition" area where you can get both in Mexico... and we usually use corn for fattier stews, as the richness of a proper wheat one is too much (it has about 20% fat by weight!).

Mexico has a weird shape. I am from southern Tamaulipas (north-easternmost state). We are only a 4-5 hour drive away from the proper center of the country (Hidalgo state), and about 6 from the border. A little bit of Hidalgo state is actually a part of Mexico City's greater area, so we have a strong food connection to the center of the country there.

Drive 3 hours north, and it's all wheat. Drive 3 hours to the center, and it's 90% corn. This gives that area, in my opinion, a relatively rich food culture relative to the north of Mexico... which of course pales in comparison to the center of the country.

We get the carne asada, the usual beef fare from the north of the country, as well as the flautas, tostadas, tortas, and other typical popular fare from the center. The only thing we're really missing is the mexican pacific food seafood culture, which I think is better.

I never thought about how far south Tamaulipas extends. I haven't been to Zacatecas in a long ass time but from what I remember there was a good mix of Northern and Southern influences.

I spoke to my aunt and cousins from down there not too long ago and they mentioned that flour tortillas are becoming very common in town.

I actually really enjoy the fact that I have so many different influences to pull from.

I was heavily dismayed to find out Jarritos is now GE as well. Probably GMO-Sugar beets, which aren't so bad, but still.
