I mean you're basically getting the equivalent of pho but more numbing spicy. Only a handful of restaurants will do it right. Like here in the US there are some Michelin Chinese/Vietnamese restaurants that does it wrong and its pretty much numbing with no flavor.

If you're in a Vietnamese restaurant be sure to try their non-Pho dishes. I could eat pic related everyday of my life.

Here's a rule of thumb with not just Vietnamese but all asian restaurants. If you go into a Pho place and they fucking sell something like Chow Mein or Pad Thai, run, fucking don't walk run the fuck out of there.

Pho place should only sell fucking pho, maybe broken rice but they should only specialized in Pho. Like >>19693016, this place is located in a fucking food court, and only sell this one dish the only choices you get to make when order is if you want it medium rare or rare, there's no medium or medium well or welldone, they would just tell you to get the fuck out because you're holding up the line.

Many, many, many moons ago, I was renting a room from a Vietnamese widow who wanted to spend time with me every now and again just talking about this and that. She'd cook dinner and have me sit with her and eat together, which was nice.
She once made this beef-and-tomato soup with carrots that she served with baguette. Idk wtf it was, if it was a properly Vietnamese dish or just something she cooked up in her head, but it was delicious.
After I moved out, we kept in contact and I'd occasionally visit with her at the old place or go out to eat or something. idky her son and daughter never bothered to visit that I know of nor why she didn't live with one of them. I'd like to visit her grave but being Vietnamese, she doesn't have one so idk what to do about that.
Anyway, back to the soup: any idea wtf I'm talking about?

If you like it then you like it, OP it doesn't matter what other people think, pic related is beef noodle soup btw. There's multiple variations based on the country, the most famous being the Taiwanese variant which is not very spicy and numbing, followed by the Chinese variant which is numbing/spicy. Pic related is the vietnamese variant made with rice noodle over egg noodles. Depending on what major city you hail from I can probably point you to a good restaurant that does em pretty good.

If you want the best Vietnamese food in the country(or outside of Vietnam) then you need to live in San Jose. Ironically the worst place to eat Vietnamese food is in Asia, IDK what the Thais do to Korean or Vietnamese food but whatever they do its a travesty.

There used to be a mom & pop place up the street from me that made the best bun bo Hue I've ever had. Also great rice dishes, their king fried rice is the first thing I ever had with Chinese sausage in it and it was fucking great. They also did a dish which was rice vermicelli with strips of beef wrapped around a chunk of onion, a thing that I'd only ever found at an older and also defunct restauran. C19 killed them and the restaurant got taken over by a younger group of people who make mad decent food but it's not quite the same and it's more expensive. I'll give the new guys this, their spring rolls are out of this world. Not as big but definitely better.

I live in chicago and have only been to one place that specializes in bun bo hue and others that are pho shops or general vietnamese. it looks a bit similar to best one I've had here. the broth in op looks more clear and has less dry seasoning than here. most americans would be disgusted by a pig foot so they sub that out for cha lua. is the other meat brisket or another cut of pork? cause here they just use thinly sliced beef which is lame. only some places here will serve the pork blood
the ratios are probably the biggest difference, the viet places here are cheap as fuck and give you a ton of broth and noodle with not a lot of meat. I went to tank noodle once and got this and it was like all fucking noodle.

Its pretty great. My Viet GF and split a house with a small Viet family. The mom speaks very broken English but she gets in the kitchen and cooks a whole family sized dinner every night after working a 10 hour shift. Ill come home from work and theres just a massive pot of soup base/broth steaming away on the stove all day long.
We get shit like OPs vid, beef pho, chicken pho, crab/lobster boils, sometimes Oxtail pho etc. Shit is so cash. If there is any left I might take a pic and post it haha
