What toppings do people usually put on hot dogs? I've never had a hot dog before.

I like diced fresh red onion, a strip of bacon, and a blast of huancaina queso sauce. Mustard, pickled banana pepper, and yellow onion is my second choice. Chili cheese dogs are my favorite use for leftover chili.

Ok guys I'm back. I decided to skip the side. I made one hot dog with fancy dijon mustard that came in a glass container and some diced raw onion. The other one I made with honey mustard, ketchup, and relish.

They were nice. I had an ice cold glass of milk to wash it down.

not a recipe per say, but some things you should consider

since it's being used as a hotdog sauce you will want more intense flavor than normal eating chili

also large chunks don't lend to using as a sauce. so a nice fine texture is ideal

I basically make my normal chili with the following mods:

>all ingredients are finely chopped
> sub out some of the meat for Mexican chorizo
> Still include beans, but they are processed with some stock into a paste then stirred in to help it get a thick and sticky but still smooth texture
> up proportioning of chilies, garlic, hot sauce type ingredients to make it a little more concentrated.

Southerners don't really travel much, so they actually believe that shit like chili and bbq don't exist anywhere else in the country, and if they do it's some inauthentic abomination that has no relation to the "real thing".
