I like Huy Fong sriracha but it's not a sauce that I lean on. Like, it's not very good on a fried egg , burrito, or whatever compared to Valentina's or Tapatio but for steamed vegetables (especially broccoli), anything with rice, pho, it can't be beat. It takes me a year or longer to finish a bottle though.

I never liked the rooster one so I didn't understand what the hype was all about. I would only get it because it mixes well into chili or with peanutbutter so one bottle lasts me forever
The tabasco one is sweeter and more flavorful, unlike the rooster one it makes sense to use as a stand alone condiment and not as a mix in

1 cup mayonnaise
2 Tablespoons tomato paste
1 Tablespoon rice vinegar
1 teaspoon paprika
1 teaspoon garlic powder
1 Tablespoon Sugar
1 Tablespoon Melted Butter
salt and pepper
2-3 Tablespoons water
*Add cayenne to taste for heat

In a small bowl whisk the mayonnaise, rice vinegar, tomato paste, paprika, garlic powder, sugar, butter and salt and pepper.
Add water as needed to get the desired consistency.
The butter is KEY here.
Let meld in refrigerator over night for full flavor.
The "authentic" YumYum never used sriracha.

Tried a 3 billion scoville unit Anus destroyer (no idea what it was actually called) that said 3 drops were lethal on the bottle. I licked the cap and couldn’t taste anything for 2 days and basically reset my taste buds to like everything.
