I'm convinced there isn't a single thing that regular grills can do better than regular kitchen gear.

Better on a pan on the stove where they can cook in the fat than on the grill where the fat just runs off

Grills are disgustingly unsanitary. No matter how much you try to clean the grates they're always covered in some sort of filth.

The only exception I would make is for grills that are smokers. You can't really smoke stuff in an oven.

I can’t smoke meat in my house without doing a shitty imitation. Charcoal also gives a good flavor to meat and vegetables. I don’t care for gas, but a flat top grill is also nice for certain types of foods. Being able to make numerous tortillas and fillings is pretty damn convenient. Also pancakes, sausage, bacon, eggs, and toast all on one surface.

Same reason why chinese food tastes better in the restaurant - wok hei. Wok hei is caused by the ignition of the oils from the high heat burner causing a smoky flavor and a unique maillard reaction, which cannot be replicated on a ordinary range. Also, the smoky flavor from the fuel cannot be replicated.
