My wife made a roast chicken. She wants to get good at making them and plants to make two a month. I taught her how to make the gravy and the roux but everything else is her I lifing the rolls which were over kneaded but still good. I think she’s gonna make it lads.

No just mashed. As for the gravy it’s good. Didn’t cook the roux too dark as we had a lot of good drippings from the chicken which is probably why it’s so light. Idk I mostly showed her once and gave some explanation as how to make a basic mother sauce and she did the rest. Tasted great. I’m proud.

Also if you don't mind fat, try putting some garlic/herb/chili/some other compound butter under the skin, adds a lot of flavor and keeps the breast juicy

To add another thing, spatchcocking is the ultimate way to roast chicken, cooks much faster and as a result is juicier as well. Just cut out that spine, push it down flat on the roasting tray and cook it skin side up. Save the spine if you want to make stock, if not just throw it away.

It does not follow from faster cooking that the result will be juicier, retard. Spatchcocking is a good method though, but not better in all metrics than roasting it whole.
