The most important part of pies and pastries is the dough, not the filling, a good pastry can handle soupy wet food well. Honestly the EASIEST of all pies would be something like the thatched roof pie from townsends without the pasta decor.
a nice stiff paste, a whole thigh or breast of chicken, seasoned lightly and baked.
Hell, prolly the easiest would be a couple breasts cubed up, seasoned and a can of organic vegetable soup dumped on.

Buy a pair of frozen pie shells. Cook one as directed while the second one thaws out. When the first one is cooked then dump a can of chili into it, and cover it with the second (thawed out) pie shell, and bake it again.
