Commercial sriracha has this weird plastic, gummy taste that ruins it. Homemade one is great.
Chipotle tabasco is also great, easily their best sauce.

I like Louisiana and tobasco to add spice and heat to things without altering the flavor of the food too much. One thing Ive noticed more about the Mexican/Asian hot sauces like Tapatio and Sriracha for example is they are very flavorful in their own way. So as much as I like Tapatio and their kind it cant be used on EVERYTHING. Franks is way too salty for me and not hot enough. Daves is ok but not very spicy, also a little salty for my taste.

There has been a ridiculous movement to see who can make their sauce be hotter without any concern for balance of flavor.
Any moron can crush ghost peppers and habaneros with a splash of vinegar and burn your mouth and asshole up for you.
It takes time and effort to build balanced flavors while still keeping a high level of heat.

Try el yucateca varieties for mex style
Maylay sweet chili and siracha for Asian
sauer’s and crystal for American style

Mcilhenneys Tabasco use a completely different pepper than most, so you either love it or hate it.

I am addicted to Tabasco sauce specifically and it took me a long time to figure out why. I like a vinegary sauce in general but Tabasco always stood out.
Partly it's they're a different pepper which it turns out is in a whole different pepper family than most of the ones we eat. But also it's fermented for several years and that's what adds the extra flavor to it. I owe Tabasco to getting me into fermentation in general.

I have a thing or two say here about this
First of all hot sauces suck .... Tough shit
They have zero life in them unlike real salsa that is fresh and will go bad in a matter of days
Next bottled hot sauces can fit in when in a pinch but as before they just suck
Lastly I would like to advise sna/ck/ers to order up some chile pepper infused olive oil and avoid most salt and vinegar used to conserve the product. I use triple heat habanero infused olive oil on my salads and it is a winner

I love hot sauces but and tried it. It's... Basically fruity with a little spice.
LIDL has good piri-piri (seasonally) hot sauce. More hot than most of these. At least in Germany for under 1€. They sell it since a vew weeks till.. Idk.. End of Sept.
Back to Sriracha: it's the shit sauce the restaurants gave their customers for free, just put the bottle on the table. The western world thought "must be a special sauce, and somehow spicy". But it's the worst and cheapest shit. And sold to a high price to the western customer. It's like the cheap mayonor ketchup samples in most fast food restaurants. It's not the best. It's the cheapest, worst.
