So, I made beef stroganoff last night, and I accidently left it out overnight (7:30PM - 1:30AM) for 6 hours.

It WAS covered during that time with a lid, but realistically, how fucked am I if I eat this?

What is the real "danger zone" when eating left out food? 6 hours seems like a lot...

2 hours is considered the safe limit for everyone, which includes people with weak immune systems. Do you have any health problems? Personally I'd probably eat it, it's a while to leave food out but I don't think it's long enough to make you sick. If it still smells and tastes okay it's probably fine. At worst you'll just get a bit of a stomachache, it won't be like getting salmonella or something.

It depends on how tightly it was covered and how clean your kitchen is. I often leave a casserole in the oven over night before refrigerator so it can cool completely. It's risky, but probably okay. Once left out that long, it's only got a few days of refrigerator storage.
