Is it safe to leave raw bacon out for like 20 minutes while I'm cooking? I want to cook an entire package for me and a friend, and there really isn't enough room on the pan for every single strip. Obviously leaving it out overnight is dangerous, but surely just 30 minutes wouldn't be that bad while I'm cooking.

When you cook something you near-sterilise it and the 2 hours starts again since it's related to how quickly bacteria multiply from a population your immune system will easily destroy to a population that might make you sick. Also 2 hours comes from a government agency trying to reduce the number food poisoning cases per yead for an entire country down to a reasonable level. It's naturally going to be conservative. we leave cooked bacon in ziploc bags on the pantry shelf to be chopped for salads for up to 7 days. it'll go for longer, because it's essentially jerky at this point, but rules are rules.
