I worked in a few Indian places (I'm white don't worry).

For me it's methi chicken followed by pepper chicken masala. I also enjoy butter chicken + chicken tika masala if the place is very heavy on the spices.

Firstly, the word you're blindly groping for is 'envious'. It's not possible to be 'jealous' of something you don't already possess. Secondly, fucking hell, it's butter chicken. That and Korma are the two dishes Indian restaurants put on the menu for people who don't like 'spicy food'. Anything, literally any other option from the menu of a half-decent Indian restaurant will be better. You could try a balti or a bhuna, neither of those will burn your mouth and they'll both taste far better. Or maybe a Jalfrezi? Nice when it's really sour. Want a bit of a burn? The Vindaloo is often a bit too hot imo (and a Phal is often a mistake), but a decent Madras is a thing of wonder. If you're cooking at home, try a Panch Phoran, easy and delicious.

Butter chicken is most popular in the US. That should tell you all you need to know about it.

It depends on your preferences. As far as chicken curries go, I'd go for a vindaloo, madras, or dansak over butter chicken. If a place does a good rogan josh and muttar paneer, I'll probably go with those.

They're all interchangeably good - hear me out.

Every place that serves curry serves it different - one butter chicken will be way too sweet and use overcooked chicken breast whilst another will be nice and savoury with tender thigh. Same two places will also have two completely different versions of every other curry.

That said, dal makhani, paneer palak and chicken dhansak are my go tos. Spinach and cheese naan, hot mix pickle and cucumber raita to accompany

Brown 2 pounds of chunked chicken thighs
Add 1 can of condensed tomato soup
2 big spoonfuls of that jarred curry paste
Let it simmer 20-25 minutes to desired thickness
Turn off the heat and stir in a glob of full fat Greek yogurt
That's how I make chicken curry and I keep giving it to asian/Indian people and they love it

Try Karahi. You just fry chicken or any choice of meat with spices, onions, and tomatoes all together. This guy did a decent job, especially for a white guy. I prefer other videos but they're in a different language so you'll not really understand it but this video will do for a beginner who doesn't know much about curries.

You can also simplify some of his steps to spare time if you're lazy

His recipe is very different from mine and already pretty simplified for a beginner. My recipe uses more more ingredients but the big one is that I include onions. I fry that with the chicken first because it elevates the taste. You don't need to include onions but this is just the style common from where I'm from
