i nailed it.
on a med-dark (more medium than dark) roast:
-med-fine grind
-12g
-55ml of water at 99c
-press for ~3 seconds and let off
-1min preinfusion
-smooth, consistent press and only ramping up when needed

before there were varying levels of underextraction, but using the above has produced the best cup. i tried the same method at 14g but it always underextracted, which was weird. i may try coarser grind on the larger dose.

I have the weirdest issue with my Breville Dual Boiler that I'm utterly fucked about trying to figure out. I've had it for about a year, and using two different powered grinders and one hand grinder, using a variety of different beans, using the same puck prep, the first shot of the day runs about 2-3 seconds faster than any subsequent shot using the same beans/recipe. Doesn't matter if the first and second shots are minutes apart or I've tested/noted up to two hours apart, but that first shot will run a couple of seconds faster and then it's consistent as fuck for any that follow.

I can only think something somewhere moves or expands or changes in relation to heat, but trying to nut it out has baffled me and I can't find anything elsewhere. Anybody got any ideas?

as you can see the italians have done irreparable damage to coffee.

but you should try it and let us know :)
i think the main problem would be using milk hot enough without the milk tasting bad or splitting.
and using milk/water at a lower temp would mean much less extraction and therefore much worse taste.
the closest idea i could think of for this kind of thing would be putting very high quality instant coffee into hot milk(around 60c is plenty for the milk to be very hot but not so hot that it splits or tastes burnt)

Don't see a roast date, unless it's on the back, and while the other anon joked fair trade is genuinely not a sign of quality in coffee. If a bag doesn't have a roast date it's got a good chance of being months old. Grocery stores and mass manufacturers in general are more concerned with use by dates, and coffee doesn't really go bad. They'll usually have a use by date that's like a year after roasting, but coffee goes staler much quicker than that. It's just a bad sign if they don't let you know when it was roasted.
