I made enchiladas. Used canned chipotles in adobo sauce for part of the enchilada sauce... no bueno... way too much smokey flavor

buy dried chiles, rehydate them in boiling water briefly, then blend it with beef or chicken stock, that should be the base of your sauce

i like what you did. i feel if you want to make enchiladas you should keep corn tortillas stocked like 80% corn 20% flour. fry them up. the chipotle in sauce is good but one of those small cans can be used for a great quantity of chicken. i just use it sometimes into the chicken tinga. and emulsified queso fresco w diced hatch chile and jalapeño is better than busting a nut.
