I'm about to bake ribs in the oven, I've rubbed them with a basic brown sugar/paprika/cayenne seasoning and I'd like to do them low and slow. I'm wondering if I should blast them with 400f heat for like a half an hour to form a crust to keep the moisture in while they bake.... is this a bad idea?
