One time my immigrant dad went foraging in the PNW rainforest. His whole family was doing this back in central Europe all the time, very experienced in IDing poisonous mushrooms and shit in their specific forest.
This was a different environment completely so he ended up picking a young fly agaric of the pale white variety thinking it was a young parasol. Fly agarics existed back home but they were usually colored. This one had a completely pale and smooth cap until it sat in the fridge for a couple of days and developed the characteristic spots/bumps.
