As far as the el Yucateco sources go, think of them as tasting more like a salsa and less like a Frank's or Terbasky. So the liquid/non-chunk partt of various salsas but much more spicy of course. There is vinegar like a normal hot source but nothing even close to Frank's. I don't even register the vinegar really; just thick, vegetably, complex but not overpowering. The red & green both taste pretty fresh, the Carib and XXXX taste like a richy fermented version (heavy on black pepper imho), the chipotle is like sweet spicy bbq like others have said, jalapeno is like a thicker and less v'niggery version of the green Tabasco, the black label is like nothing else I've ever had and if you want detailed commentary read the thread - I love it, others hate it, it's 11/10 on steak.

I hope that at least gives you an impression; if you want to try any I would say go for the red and Caribbean because that gives you an idea of the spectrum they're working in without buying into the whole damn rainbow.
