Roasted bell pepper, plus some dried ancho and chipotle peppers rehydrated, plus toasted cumin seeds ground, then blend it all to a pureee.

Sautee diced onions in a pan, then add your beans, the pepper puree, and some vegetable stock, salt to taste, dried oregano, then simmer on a low heat until thickened.

Sub some of the stock for chopped tomatoes or passata, but personally I like the sauce to just be peppers.

Four 4 people who kight get seconds.
Ingredients:
3 Red bell peppers.
250g Okra.
250g (wet weight) kidney beans.
250g (wet weight) cannelini beans.
Two onions (large).
One tube of tomato purée paste.
Two tablespoons of Kikkoman or similar soy sauce.
40g of butter.
2 tablespoons of cooking oil of your choice.
2 thai chilis.
3 cloves of garlic.
1 habañero.
Water, 3 cups.
2 tablespoons of vinegar.
Dried paprika powder (two tablespoons).
One twig of rosemary.
One bay leaf.
Two teaspoons of black pepper, finely (and freshly) ground.
Salt for seasoning.
Sugar, 2 teaspoons.
Serve with Jasmine rice or some sort of bread yoy like (or boiled/steamed fingerling potatoes).

Coking:
Heat pan, oil in pan, medium heat, bell pepper batons in. 3-5 minutes later, diced onion in together with the coin cut okra. Still medium heat. Sautée together. 5 minutes later, add sugar and lower heat to low (2/10 or 1/5 or closest abstraction). Add minced garlic. Stir for about 30-45 seconds. Add tomato purée paste. Stir and try to mix the ingredients fairly well. Add butter. Stir. Increase heat to medium/low. Wait one minute while stirring. Add vinegar. Stir. Wait 1 minute while stirring. Add spices. Stir. Add water. Increase heat to medium. Add beans. Stir. Add soy sauce. Add what's left of your aromatics. Stirring about once a minute, or so, let cook for about 15 minutes, taking care not to burn the bottom.

At some point you also made rice.
