Instant pots are reasonably good jack-of-all-trades appliance. I cooked exclusively with one while trucking, you can make a decent version of most things between saute mode and pressure cooking.

OP, I’m in a similar situation but probably worse since my kitchen is technically a laundry room. Feel free to study pic related if you’d like ideas. Instant pots are great for this btw, I have one and use it all the time for pinto beans.

A clamshell contact griddle is exceptionally useful.
The angled ones, like Foremans, neatly drain excess grease, but this feature makes them hard to fry eggs with.
You are absolutely fucked, so also get a portable butane stove. Spend some money for a quality imported 15k BTU one. Very useful for tabletop hotpot or when the power gets offed.

Instapot (for rice/noodles and batches braised meats/poultry to prep for the week) and toaster oven for desserts (baklava, fruit filled pocket pies, cookies), bread and stuffed savory/dessert calzones/empanadas.

if i were you, i'd invest in a decent countertop oven, a double burner cooktop, and potentially bite the bullet and get a pressure cooker. With that you can cook pretty much anything you need to. Good luck, you fu/ck/

Microwave
Induction/ butane burner x 2
Instantpot

air fryers are completely redundant if you get a nice countertop oven with convection settings.
