Stir fry some diced tofu & assorted vegetables, serve with rice or noodles. Hummus on flatbreads can be pretty good - add diced cucumbers, red onions, and tomato on top. Also look for assorted Indian dishes, plenty of veggie options there - chana masala is simple to make, and taste good. Bean & cheese burritos or tacos are another simple option.

In general, look for foods that taste good and are nutritious that happen to be vegetarian, rather than stuff that goes out of its way to imitate meat.

How long have they been doing it? I ate a lot of that stuff when I first went vegetarian but after a while got sick of it and rarely ever ate it again. I actually got healthier as a vegetarian too, because I started paying more attention to what I eat. Studies show the average vegetarian being healthier than the average omnivore because of that. Although a proper omnivore diet still seems best, but most meat eaters will eat anything including more junk food. But you can eat well and be healthy as a vegetarian and you don't have to give up animal protein.

Shakshuka, ratatouille, French onion soup (just don't use meat stock), rissotto, pasta with tomato or pesto sauce, tacos with eggplant instead of meat, omelettes with vegetarian fillings (try fresh tomato, parsley, basil, salt, pepper), etc.

Vegan is much harder, cooking for vegetarians is easy mode. You might end up making the best food they've ever had if they're a "can't cook, subsisting on salad" vegetarian, which is always a nice complement.
