I always prefered cap cempol (Thumb's Up! brand, literally "thumbprint") sambal asli (literally "original chilli sauce").
Try that. Word of caution: it's sold in glass bottles so if you're one of those people who prefers a squeeze bottle, it might not be for you. ABC or Heinz (actually, I think Heinz owns ABC, lol) does a squeeze bottle one that's not quite as good as Thumb's Up, but good enough.
Certainly better than Sriracha, IMO.

It reminds me of this American-made salami I bought once. After noticing its odd flavour, I checked the ingredients and it was cured with nitrates/nitrites (can't recall which; maybe it was both, idr). As I'm used to salami just being salted, fermented and dried IE no nitrates/nitrites necessary, I can only assume that was the weird flavour I disliked in the Amerilami.
Sriracha also has a chemical-y taste I don't much care for. Idk if it has nitrates/nitrites in it and I don't think it does but something's in there that doesn't agree with my palate.

I don't use it at all and I cook daily, if not nearly so.
Grew up with homemade chilli sauces (and cap jempol, which I mentioned above) and those are dissimilar to Sriracha because either
1) they're raw and mashed at
2) they're boiled, pureed and cooked down to condense or
3) they're fried, pureed and cooked down to condense

Sriracha and cap jempol are both fermented, which is a different flavour altogether.

Food gets in on the action, too. For example, I buy beef in the summer when it's at its cheapest for grilling season and freeze that shit.
