this dudes so fucking retarded. the point of marinade is 2 fold:
1) the brine/dry brine effect. it draws out moisture, salinates it and drives it back into the meat.
2) the 1mm or so that does absorb the marinade flavor is all you need. You get a flavorful exterior with seasoned inside meat. The same idea as fried chicken.
