There are plenty of extremely skilled cooks and chefs making very good tutorials with great advice given on Youtube.

Cookbooks can be great, but if a picture is worth a thousand words, a video is worth ten thousand.
Cookbooks are best to use when you need a quick refresher on amounts, but already know the technique. I already know how to make bread and how to knead dough, so a quick reference to Flour, Water, Salt, Yeast, or another of Ken Forkish's books for the ratios of a specific type of bread, is very useful.
But I wouldn't have wanted to learn everything from that book, as there were some tricks that I only picked up from watching videos.
