Almost all espresso recipes work with Moka. Espresso is sometimes a convoluted process and a new rabbithole to get into, while Moka is fast, easy and cheap.

My friend is years in the hobby and his machine is rarely used, he just gets by with a v60 and aeropress nowadays. I thought about buying his machine but I'm not ready to enter that rabbithole.

Yesterday his message touched me and made me sad, so I was thinking that I could make my economics and business organization degree to good use and make a project to fix what's wrong or doesn't work with Torrefazione Penazzi, one thing above all the fuck huge quantity of brands and websites that are not under an unique website and social media profile.

Maybe if I'll help him fixing his business I can ask him if he could teach me how to roast coffee in exchange, so I can become his spiritual successor.

I like Alberto and I love the passion he puts in his job and what he does, he deserve my help for he is a genuinely good person who makes the world a better place, one of the few remaining.

I made the first aeropress goffee today, it wasn’t good.

I followed the hoffmeme recipe:

>200 gr water @ 85ºC
>11 gr goffee medium grind
>cover the coffee with all the water, after 2 minutes swirl the aeropress and after another 30 seconds press

Probably I fucked up because when I inserted the plunge, the tip made a lot of resistance when entering the tube and I pressed out half of the coffee in the first seconds…

So result: dirty sweet water with a little bitterness, no other flavour. Went into the sink.

First lesson learned: use the inverted method from now on.

The hoff method is fine so long as you don't push half your fucking coffee through when you put the plunger in. It does take some practice, I remember having similar issues early on, but once you can do it it's much simpler than inverted.

There's obviously resistance since you're pushing against the air inside it. You're only supposed to insert it so that it's barely in, and NOT pull on it afterwards. If you do you might suck in air through the bottom, which causes the whole thing to shit itself.

It doesn't really matter if it's inclined so long as it forms a full seal. You're trying to achieve the same effect as blocking a drinking straw with your tongue to keep the liquid in, you just need to make sure the plunger seals the top off.

If you want to make espresso while backpacking/hiking/travelling yes. If you want to use it daily or a bunch of times per day or for multiple people no cause it's a pain in the ass. I can make some nice espresso with it though.

Today I made several pour overs with my current Brazil/Guatemala blend which were nice but I think I prefer my previous Brazil only beans for that method. I have yet to dial this blend in with espresso though and it was recommended to me for espresso by a friend so perhaps that's where it will shine.

I definitely wouldn't advise you to replace it, if you're planning on selling it to buy the pavoni that is. The europiccola is neat and looks great, but I wouldn't swap a "proper" espresso machine for it. If you can own both then maybe go for it.

Never heard of grinder with scale, there are ones with timer though. They require certain amount of beans to keep the feed consistent (beans will stale faster in there) but even then it varies. Just use a scale, or pre-weight doses in multiple tubes so you only need to do it once a week.

No grinders have a built in scale as far as I know. People usually measure the beans they're putting in.
As for actual grinder recommendations, if you want an automatic one (I'm guessing you do) then the top filter grinder is like the fellow ode 2, but it's above your budget. Some people aren't fond of it but the wilfa svart grinder is relatively cheap.

I want to try the aeropress experience, but I'm scared off by the plastic (have no reason to trust it's suddenly safe just because it lacks known-poisons-x-and-y). With glass's heat retention, would the Premium still make comparable goffee? Right now I'm mostly using a (glass) v60 and I'd just like some more variety, but idk if it would be worth it at whatever price point they put it at, vs. saving up for a Flair or something.

I have a GCP, I don't get the giant bubbles like the bad example but my swirl is inconsistent. I let the milk sip air for a couple seconds then submerge the wand and do my best to get the swirl going. Start steaming before the light comes on. I've tried 10 to 20 seconds after hitting the switch, don't know about the exact time or surfing but it works way better. I have the wand out to the right and point the pitcher to the left, I don't have much of an issue with the pitcher bottoming out on the drip tray like trying to steam at the front of the machine. Also I slid that rubber finger protector up the steam wand because it would block my pitcher with low milk. Last tip is single hole is supposed to be better with Gaggia classic and you'll make less accidental big bubbles.

While I'm here with another gcpanon, I recently started purging all the steam out of the boiler with the wand before pulling a shot and it may have just demystified bad channeled espresso with the Gaggia. It builds up steam in the boiler in the normal heating mode and it comes out of the group head with your water. Also with the steam valve open you can know the heating cycle of the boiler and surf with it. But there is a temperature penalty when letting the steam out, but with surfing it might not matter

Aeropress newbie anon here, follow up from yesterday.

Today I tried 2 times:

>First goffee (faux espresso) was 60 grams of water @ 80ºC, 15 grams of coffee, 10 seconds stir and immediately push

>Second goffee (3 cup moka) was 150 grams of water @ 90ºC, 21 grams of coffee, 10 seconds stir and immediately push

Both coffees weren’t hot in the cups, they were mild, the taste was sweet with low body and persistence, but it was good.

I probably need to increase the extraction, so - tell me if I’m wrong - I need to let the coffee in the aeropress rest more (1 minute? 1:30 minutes?) to enhance the body and overall flavour for a concentrated drink moka style.

It’s a funny tool but I’m using a lot of coffee :D
