Bought this paste to make curry. Have 2 portions leftover. Only used like 1/8 of it and realized it says it only last 2 weeks after opening.
What else can I use it up for?

Problem is it's very hot (I like the curry heat, but I don't eat hot a lot in general) and can't/don't want to have recipes with coconut cream everyday, because I'm tracking calories.

just toss it at that point desu. yeah we could give you recipes that temper heat in red curry paste but you would have to buy additional ingredients specifically to make them, offsetting any kind of monetary benefit you may have gotten out of trying this hard to use the rest of it. just learn from this experience and dont buy 260g of a product you never use and dont really like.

Anyway, red curry paste is used in lots of things besides actual curry like fish cakes and Northwest-style pork sausage.
Look up recipes for sai ua (the sausage) and thit mon pla (the fishcakes).

scoop it into a plastic bag or something with less room for air so it doesn't oxidize. curry paste is full of salt, it will last forever.

don't listen to the label, it's not going to suddenly become inedible after 2 weeks. dunno about this brand but i've used a different one for months and it was fine. apart from curry i'd use it basically as a seasoning, add it to marinates for meat and fish, add to ramen and soups
