Rabbit is okay. Best prepared braised or stewed--and in season. They are tough and can have parasites or tularemia too late in the summer.
Of course, my girls like them raw. The heads of little ones are crunchy and fatty, and the big ones they catch, they bring to me first so I can check the liver for spots and make sure they don't have worms.
Jugged hare is a simple but classic recipe,
Bake in a large ceramic pot with a lid:
1 quartered rabbit
carrots, onions, shallots--anything that rabbits would also eat-- quartered red potatoes, a bundle of fresh Herbes de Provence,(dried is fine too,) after ingredients are in, add water until about half full, then pour in to cover 1 bottle white/red wine of your preference.
Salt and fresh ground pepper
Bake in a 300°-350°F oven for 2 hours, checking liquid levels occasionally( doesn't need to be covering the rabbit after it cooks down, just don't let it go dry--Add BOILING water if needed, 1/2 C at a time.
Serve with fresh hot baguette and butter

I don't think I've ever managed to cook it properly.
I've tried smoking and stewing it in the past, but never had luck with it.
It tastes okay, but it's not good enough to justify the price in the store, and not something I actively hunt.

I've had a lot more success cooking duck, which I have an easier time justifying because I've got friends that will actively pay me to cook that for them.

I used to go to a university where we had a shitton of the rabbits on campus so I'd bring a pellet gun there at either 5am or around 8pm and maybe get one rabbit every 1-2 weeks. It was a pain in the ass at first but after a couple times you can clean it in less than 10 minutes, maybe even 5ish? Because you just cut the back of the neck, pull the fur off, empty abdominal cavity, cut backstraps off, and tear legs off and remove the meat from them. Compared to other small game rabbits actually have a shitload of meat on them. Because they had little fat I'd generally put the meat in a salt/ sugar brine to soak overnight so that it'd retain good texture after cooking (if you don't it dries/ toughens rapidly after cooling). Best recipes were mushroom rabbit potato stew, and breaded/ fried rabbit. It tastes amazing, not as heavy as beef but muchore satisfying than chicken or pork.
